10 Pasta salad recipes for foodies

Pasta is one of the most famous delight dishes. Originated in Italy, pasta’s popularity has reached peak and it has spread all over the world. Kids love this food very much. There are different varieties of pasta based on their shapes like spaghetti, penne, fusilli, vermicelli, fettuccine, lasagne, farfalline, macroni and many more. Though the ingredient is same in all varieties, taste is different even if prepared using same sauce. That’s the magic of pasta! They can be served as a snack or starter or salad or a meal. You will love them hot as well as chilled. Here are a few pasta salad recipes which can be prepared at home very quickly. These cool salads are low in calories and can be relished in a hot sunny day.

1. Pasta in white sauce

For preparing it you will need mayonnaise in generous amount and penne pasta (though you can take any kind of pasta). Boil pasta in salt water and add a teaspoon of oil while boiling it. Then drain out the excess water and place the pasta in cold running water. It will help them not to stick to each other. For the dressing take ready made or home made mayonnaise whichever you like. Add salt to taste, little bit of sugar, few drops of vinegar, chopped green, yellow and red capsicum (say about a bowlful), black olives (one fourth of a bowl), oregano and chilly flakes. Mix all the ingredients together and it’s ready to serve. You can refrigerate it, but take it out 15 minutes before serving for getting a smooth consistency.

2. Salsa pasta salad

For it’s preparation you’ll require macroni pasta, salsa sauce, a few garlic cloves, chopped spring onion, green chillies, olives, yellow and green capsicum finely chopped, a teaspoon of black pepper. Take a thick bottomed pan and put a teaspoon of olive oil in it. Then add garlic cloves, chopped capsicum, and spring onion in it. Saute them till they become tender then turn off the stove. Add chillies, salsa sauce and salt (if required as salsa sauce will also have salt in it). Add macroni in it. Serve it chilled.

3. Spaghetti in creamy style

For this salad you will need boiled spaghetti, milk (1-2 glass), flour (1 tablespoon), butter (2 teaspoon) and vegetables like carrot, beans, corn kernels, cauliflower florets, broccoli. First you will have to heat a pan and put butter in it, then add flour and as it turns pink add milk and keep stirring it so that no lumps are formed. Add salt and sugar as per your taste. Put the burner off and add par boiled vegetables in it. Also add the spaghetti, chilly flakes and oregano. Garnish it with the grated cheese. It tastes awesome. It can be baked also if you want to serve it hot, otherwise serve it at room temperature.

4. Pasta with cherry tomato

You can take farafelle for this salad preparation. Heat butter in a pan and add cherry tomato in it, subsequently add celery and tomato puree in it. Heat till tomatoes turn soft. Add salt, pepper and vinegar. At last add pasta and grated parmesan cheese. Allow it to cool. Garnish it with coriander leaves and serve with garlic bread.

5. Colorful salad

For it, you’ll need all types of pasta you can get from macroni to penne to farafelle. Collect as many variety of pastas, boil them and keep separate. Now saute all the colorful vegetables you can get like broccoli, red, green, yellow capsicum, carrot, tomato and garlic cloves. Saute them for 2-3 minutes. Add salt and freshly crushed pepper balls. Add pasta to it and serve it at room temperature.

6. Pasta and curd salad

Take fusilli pasta, boil it and keep aside. Take one bowl of fresh curd and add fresh cream in equal amount. Add grated parmesan cheese to it. Add salt, sugar, pepper according to your taste and add few drops of wine to it. Add par boiled vegetables like broccoli, celery, carrot and beans to the curd. At last add fusilli. Serve it chilled.

7. Pasta and baby corn

Take penne pasta for it. Boil them and keep it separate. Now heat olive oil in a pan and add baby corn to it. Add red and yellow capsicum to it. Add black olives, salt, black pepper, oregano and then at last add penne to it. Keep the stove off. It can served at room temperature.

8. Pasta with chicken shrimps

Take shell shaped pasta and macroni. After boiling keep them separately. Then take a bowlful of chicken shrimps and saute them in a pan with butter, pepper and salt. Take one and a half bowl of fresh cream and half bowl sour curd. Take spinach leaves and shred them. Take half bowl of parboiled broccoli. Blend curd and cream. Add salt and white pepper to it. Then add macroni, shell shaped pasta, chicken shrimps, broccoli and spinach leaves. Mix well and serve chilled.

9. Egg on fusilli

Boil fusilli in advance. Take two to three eggs and put them on a preheated pan with butter on it. Keep mincing them well. Add salt green chillies and little pepper. Take boiled chickpea say about a bowl, and one bowl of boiled and square cut potatoes. Mix fusilli, chickpea, potatoes and minced egg. Add salt as per your taste. Add a few drops of lime juice and garnish with coriander leaves.

10. Baked pasta

Take any kind of pasta and boil it. Now take egg white of three to four eggs. Mix it well and add salt, pepper,lime juice, chillies, coriander leaves to it. Take roasted chicken shrimps, parboiled cauliflower, carrot, beans and capsicum. Mix all the ingredients and put it in a dish. Spread the grated cheese on top of it and allow the dish to bake. Microwave it for 3 minutes or bake it for 15 minutes. Serve hot.
