Is adding zucchini to potato pancakes recipe fine?


I am searching for an easy to follow, but really delicious recipe for the potato pancakes. Would you advise adding zucchini to the potato pancakes recipe? Do yo have any other delicious potato pancakes recipe? Will you share your holiday recipes of the special pancakes with me, that you think an amateur cook like me can make easily? Please mention the recipe in a detailed manner?

I'd let you know how to make the zucchini potato pancakes. The ingredients for the same are as follows- Zucchini, coarsely grated- ( 4 medium), Onion, grated- (3 small), All purpose flour- (4 tablespoon), Egg, lightly beaten- (3), Sour cream, Potatoes, peeled and finely shredded- (3 large), Salt to taste, Cornmeal- (4 tablespoons), Oil for deep frying. Method:- In a sieve or colander, drain zucchini, squeezing to remove excess liquid. Place zucchini in a bowl and add potato and onion. Stir in the cornmeal, flour, salt and egg mix very well. Now, coat the bottom of a skillet with oil. Add 2 tablespoons batter. It should be followed by pressing lightly to flatten. Cook over medium heat until golden brown, about 4-5 minutes on each side. And repeat with remaining batter. Serve hot with sour cream. Tuck in!
