Can anyone help me to avoid oil which was used in making Indian food in those videos of Indian cooking?


I was watching some videos of Indian cooking which my cousin has sent me from India on my request. The recipes which I have seen were awesome but I have confusion. I want to know why all the food was made using lot of oil. I mean I have never seen any food with lot of oil in it. Is there any other way in which I can cook those recipes without much oil?

Since you have not mentioned the names of the dishes, I am giving general tips for oil free cooking (Indian food).

When you cooking dishes like jeera aloo, dum aloo instead of roasting you can bake the potatoes at 200 C for 20 minutes or till they turn golden brown with very little oil.

Paneer or cottage cheese tastes good and will be very soft if you do not fry them before adding to the gravy.

Cutlets and tikkis can be shallow fried instead of deep frying. Baking them is also a good option. Koftas can be either steamed or shallow fried.

To get a nice thick rich gravy, instead of adding lots of butter or cream, add milk or soak some almonds and grind along with the other ingredients.

Chapathi's or roti's dough, when kneaded with curd or milk will be very soft and will need very little oil or ghee.
