Are you aware of any kind of innovation that I can do to change the traditional Spanish cuisine recipes?

Whenever I told my mom to cook Spanish cuisine she usually cooks it in a traditional manner as she knows that method only and she also thinks it’s best to stick to the traditional way of cooking. But I think little different then hers'. I want to know some new and innovative ways in which I can make the traditional Spanish cuisine more exciting and tasty. Are you aware of any kind of innovation that I can do to change the traditional Spanish omelet?

I will tell you my style of making Spanish omelet. Sharp Knife for the Chopping Onion and the Potatoes,1 Large Frying Pan for just Frying Potatoes and the Onions,1 Medium Frying Pan for Cooking the Tortilla,Potato Peeler,2 Mixing Bowls one large and one small. It's preparation time is 10 minutes. The Cooking time is 20 to 25 minutes. It serves 6 to 8 for the Appetizers. Gather the Ingredients are 6-7 medium size potatoes which should be peeled, 1 whole yellow onion,5 to 6 large eggs,2 to 3 cups of olive oil for the pan frying, salt to just taste. Carry the plate with potato-egg mixture and empty pan to your stove. Place your frying pan on the range and then put just enough oil to cover your bottom and sides of the pan which is approximately 1/2 tsp. Let the pan warm for about 30 seconds or so on the medium to the medium low heat. Carefully slide your tortilla (which is very much probably still one bit runny), into your frying pan, using one spatula to just catch any egg mixture which remains on the plate or tries to just run out. Use your spatula to just shape the sides of your omelet. Let the omelet cook for about 6 minutes. Turn on the heat off and then let the tortilla sit in your pan for 2 minutes. Carefully slide your omelet onto a large plate.
