Hi

Try this to make your cake spongy.

4 eggs

3/4 cup of castor sugar

1 cup of corn flour

1 teaspoon of baking powder

2 tablespoon of melted butter

Pinch of salt, water and vanilla essence.

Take a bowl and mix eggs and pinch of salt. Beat them until the mixture becomes fluffy. Add sugar and beat well. Add corn flour and baking soda. Beat well. Remember to sieve the corn flour and baking powder before using. Add melted butter and vanilla essence. Mix well. Now take a baking pan and grease its all sides. Pour the mixture in it. Bake in oven at 180 degree C for 20-25 minutes.

You can steam your cake this will make your cake spongier and light. Do not over bake it. Take a tooth pick or knife and insert it in cake, if it comes clean than it means cake is baked completely. Over baking will make it harder. You can also add 1 teaspoon of vegetable oil in cake batter. This also helps to make cake softer. Do not add much baking powder, this will not make your cake softer, but it tastes bitter.

Try all these tips; you will surely make cake spongier and softer.
