How can one braise the pork belly the Filipino way?


I have become a fan of the Filipino pork recipe, Pork Humba so much that I want to make it every other day possible with a plate full of rice. If there is any expert cook out there who knows how to duplicate the Filipino recipe at home, then please help me out? How do I braise the pork belly the Filipino way? What all ingredients will I need?

This is a great option to cook the pork belly the Filipino way. This is an economical and delicious dish. This crispy and succulent meat dish is great to be served with rice, potatoes and leftovers.

Ingredients:

Four lbs pork belly cut into portions, salt and ground black pepper, onion, 2 carrots, 2 celery ribs, 5 cups of chicken stock, 3 cups of orange juice, light brown sugar, fresh thyme, 4 whole cloves, 1 teaspoon of whole allspice, sugar a sharp knife, roasting pan, sauce pan and a baking sheet.

1. Initially, you need to preheat the oven to broil.

2. Score fat aside of the pork belly using a sharp knife.

3. Then, season pork belly with salt and pepper. Rub salt and pepper into the scores.

4. Put onions, carrots and celery in the roasting pan. Place pork belling on top of the vegetables.

5. Broil until it becomes golden brown. Turn the belly over and broil for another 5 minutes.

6. Reduce oven temperature to 300 degrees.

7. Turn the pork back and add chicken stock, juice, brown sugar, thyme, cloves, and all spice.

8. Cover pan with foil and bake for 2 hours.

9. Prepare glaze by straining the pulp out. Combine juice and sugar in a saucepan and bring to a boil.

10. Remove pan from the oven and allow the pork to cool slightly

11. Drizzle the remaining glaze on the pork belly and serve immediately.
