Yes butter chicken is a recipe of sanjeev kapoor. The ingredient are 1 kg of boneless chicken skin removed,Juice of 1 lime,Salt to taste,1 tsp of red chilli powder, (adjust to suit your taste), 7 cloves,8-10 of peppercorns,1 inch stick of cinnamon, 2 bay leaves,8-10 almonds. Mix some chicken, lime juice, little salt and red chilli powder in a large, totally non metallic bowl. Cover and allow it to marinate for 1 hour. Heat the flat pan or griddle it on medium heat and gently roast (while stirring frequently) the cloves, peppercorns, cinnamon, bay leaves and some almonds till they darken slightly. Cool and add some cardamom seeds. Now grind into a coarse powder in a totally clean, dry coffee grinder. Mix the yoghurt, above the whole spice powder, coriander, cumin and the turmeric powders together and add them to the chicken. Allow to marinate for another hour.
Heat some oil in a deep pan on medium heat. When it is hot, add the onions. Fry till a pale golden brown in color and then add the ginger and garlic pastes. Now add the tomato paste, a chicken stock, kasturi methi and remaining part of that yogurt spice mix to that chicken. cook till that chicken is tender and the gravy is very much reduced to half its original volume.
