What makes Colombian food so tasty?

I am a great fan of Colombian food. It tastes so good, even better than Italian. It is a contradictory statement to make as I am an Italian and should be liking Italian food and not Colombian food, but then since my neighbor is a Colombian woman, she made me taste really lovely Colombian dishes like bunuelo or empanada with sancocho de gallina. I want to know that what is it that makes Colombian food so flavorful and rich?

What make’sthe Colombian food so tasty is the inimitable way in which it is prepared andits culture, topography and climatic conditions. The cuisine of Columbia is aunique mixture of European and African cuisines; both its traditional and contemporarycuisine uses the best of local products, thus locking in the authentic flavor recognizedwith the place. Columbia’s national cuisineis as varied as its geography and everything found in their cuisine is grownpractically in their soil. The delectable Columbian fare is a uniqueblend of fish, barbecued chicken, lamb, beef and various other types of meat.

We candivide Columbian food on the basis of its main regions like :

1. The Atlantic region: As it’s hot and humid climate, the cuisine here is influenced by the Middle East and Lebanese cuisine. Sea foodlike lobster, shrimp, oysters, crab and salt water fish forms the main diet inthis part.

2. The Andes Region: It gives you the feel of South American Andes for their rustic farming methods. Here coffee, cocoa, flowers, fruits, pork, steak and Chicken dishes are verypopular.

3. The Amazon and OrientalPlains: This is dominated by the plains, forests and rivers. This area produces adelectable fare of fresh water fish, bananas, rice, cacao, plantains, chicken and coconuts.

It is these alternatives and adaptations whichare not in conflict with the freshness of the national flavors or foodstuffswhich makes their cuisine concepts placed high globally.
