Dussehra Feast: Breakfast Platter on Eighth Day (Astami)

The breakfast platter on the eighth day of Dussehra mainly consists of Payesh, a dessert equivalent to Kheer in North India. The recipe of Payesh or Indian rice pudding is as follows:

Ingredients

3/4 Cups of Basmati rice (Washed)

4-1/4 Cups of Milk

1/2 Cup Sugar or Melted Jaggery

2 tablespoons Cardamon Powder

Rose Essence

Raisins

Almonds

Cashewnuts

Method

1. Boil milk and add sugar to it.

2. Simmer the heat and keep stirring the milk and sugar mixture.

3. While the milk boils, add rice grains and simultaneously stir the mixture.

4. When the rice has become soft and the milk has condensed, add cardamom powder and all the dry fruits.

5. Remove it from heat and add rose essence. Cool and serve.
