Fish stew in coconut milk
Summer is the season when we freak out with a lots of cold stews in India and the base for most of these stews is coconut milk. I am sharing with you a recipe that makes the use of coconut milk for fish stew. The recipe is as follows:

Ingredients
Fish fillets
Sliced Potatoes
Sliced Brinjals
Sliced Capsicums
Cauliflower Florets
A pinch of turmeric powder
3 Cups tinned Coconut Milk
Peppercorns
Slitted Green Chilies
Cinnamon Stick
Salt
Bay leaves
Crushed Ginger
Chopped Onions
Method
1. In a wok heat oil and add all whole spices, chopped ginger, onions, bay leaves and turmeric powder. Fry until onions are brown.
2. Add all the vegetables and fry for sometime. Add coconut milk and cook until the vegetables are tender.
3. Add whole green chilies salt and a bit of sugar.
4. Add fried fish filets and simmer for 10 minutes.
Serve with boiled rice.
