Mashed veggie gumbo with lentil cakes...

I simply love the idea of making a gumbo of eggplants, mashed potatoes and lentil cakes. The purpose they are comfort foods that have room for innovation and can be flavorful if done properly. The recipe is as follows:

Ingredients

Mashed Potatoes

Mashed Eggplants

Crispy fried Lentil Cakes

Sliced Onion

Crushed Garlic

Chopped Cilantro

Tomato Puree

Cayenne Pepper

Cumin Powder

Yogurt

Method

1. Fry onions and garlic until brown. Add all the spices and the veggies, except lentil cakes.

2. Fry the gumbo until the mashed veggies change color. Once they are brown sprinkle crushed crispy-fried cakes.

3. Garnish it with yogurt and chopped cilantro.

Stuff this veggie paste in tostada, burgers, pair it with fried chicken or sauteed spinach.
