Mixed Vegetable Poha

Ingredients:

2 cups flattened rice (Chidwa)

2 cups water

1 potato, chopped small

2 tablespoons oil

1 onion, chopped fine

Vegetables of your choice –chopped (carrots, capsicum, French beans)

1/4 cup groundnuts (raw peanuts)

1/2 teaspoon turmeric (just enough to color the rice)

1/2 teaspoon mustard seeds

Lemon juice- to taste

Salt and pepper

Method:

Soak the chidwa in water for 5 minutes, drain and put to one side. In a big round-bottomed frying pan, heat the oil till very hot. Add mustard seeds, onion, potato, chopped vegetables and groundnuts.

When the mustard seeds are warm, cover with water and cook till all the vegetables and groundnuts are tender. Put chidwa in frying pan and put little turmeric and mix with the veg mixture until hot.

Add salt, pepper and lemon juice to your taste. Serve hot.
