Pepper prawns in tangy sauce

Prawn and peppers have the most subtle combination and the reason why most cooks prefer this pairing is because prawns cook fast and both prawn and pepper complement each other well. But here the use of red pepper stands out the most and the recipe is as follows:

Ingredients

Diced Red Pepper

Diced Shallots

Minced Garlic

1 tbsp Lemon juice

1 lb Tiger Prawns(Shelled and Deveined)

1 tsp Shrimp Paste

Salt

Cayenne Pepper

Lemon grass

Chicken Stock

Sesame seed oil

Method

1. Marinade prawns in lemon juice for an hour.

2. Heat oil in a wok and fry shallots, garlic, red pepper and prawns.

3. Once the prawns become pink add shrimp paste, lemon grass, cayenne pepper and cook covered for 5 minutes.

4. Add chicken stock and a teaspoon of salt. Simmer the gravy for 2 minutes.

5. Serve with white rice.
