Raw Banana Curry

Raw banana can be used in a variety of ways. In South-Indian cuisine it is stir-fired, stewed, curried and even added to vegetable casseroles. The most interesting profile is carried by Raw Banana Curry, which is a good change in palate for those feeding on bland foods daily.

Ingredients

Diced Plantains or Bananas

Grated Coconut

Roasted Cumin

Roasted Cinnamon

Green Chilies

Peppercorns

Crushed Ginger

Bay leaves

Turmeric Powder

Tamarind Juice

Salt

Oil

Method

1. Grind together coconut, cumin, cinnamon and green chilies to a fine paste.

2. Steam diced bananas with turmeric powder

3. Heat oil in a pan and add peppercorns, bay leaves and crushed ginger.

4. Add the coconut paste and fry for sometime.

5. Add bananas and cook for 10 minutes.

6. Finally add tamarind juice and salt.

7. Add water and simmer for some time.

8. Serve with boiled rice.
