Sardines curried with lentil cakes

Lentil cakes form a vital ingredient in South and East-Indian meals. These lentil cakes are called as Moong Vadi is made from a batter of green gram flour and water. Lentil cakes or moong vadi are exported from India and is also available at grocery stores all over India.

Moong vadi is usually eaten in fried form or as an ingredient in curries, chutneys or yogurts. Moong vadi makes a great pair with sardines, eggplants and tomatoes. The recipe is as follows:

Ingredients

Shallow-fried sardines

Shallow-fried moong vadi

Sliced Brinjals

Drumsticks

Sliced Potatoes

Tomato Puree

Ginger-garlic paste

Cumin Powder

Coriander Powder

Red chili Powder

Salt

Mustard Oil

Method

1. Heat oil and fry ginger-garlic paste, spices and tomato puree for 15 minutes until the fat leaves the sides of the pan.

2. Add the vegetables, salt and water to the pan and cook covered until the vegetables are done.

3. Add sardines and moong vadi to the cooked vegetables and simmer the gravy.

4. Serve the sardines curry with white rice.
