Spinach juice infused for preparing sweet meats
I have never heard of a spinach recipe that add sugar to the leaves, but here we are at the Iwate Prefecture in Tono who have prepared five different variety of sweets from the sweet spinach. They have not added sugar to the sweets as the spinach is sweeter than the normal spinach used in gravies, salads, stir-fries and soups.

The local chefs in Tono have actually infused the juice of sweet spinach into other ingredients used to make the sweet dish. The sweet spinach is basically fresh and greener than the normal spinach. They are high in anti-oxidant, and I presume that the local chefs might have had the same idea in their minds along with experimenting with spinach in a new and innovative way this spinach season.
