Spring onion stems fried with potatoes and meat

Spring onion stems are often neglected while cooking the vegetable, but the supple texture, pungent aroma and nutty flavor of the stems are incomparable when cooked with vegetables and meat. This weekend while I was making mutton stew with spring onions I decided to save the stems and cook it with lamb and potatoes. The recipe is as follows:

Ingredients

Chopped Spring onion stems

Chopped Potatoes

Diced Lamb meat

Turmeric Powder

Red chili Powder

Oil

Salt

Method

1. In a wok heat oil and add spring onion stems with chopped potatoes, diced lamb meat, turmeric powder, red chili powder and salt.

2. Mix all the ingredients and cook covered on a low flame until the spring onion stems are tender and lamb meat is cooked.

3. Serve the stir-fried spring onion stems with rice or as a side dish with curries.
