Spring Stew with lamb meat and vegetables

I love beef stew with lots of vegetables and herbs. Here is the recipe:

Ingredients

Lamb Meat (shoulder)

Chopped Shallots

Chopped Carrots

Chopped Green Beans

Broccoli Florets

Chopped Potatoes

Cauliflower Florets

Crushed Ginger

Chopped Tomatoes

Slitted Green Chilies

Chicken stock

Basil Pesto

Chopped Parsley

Salt

Black Pepper

Black Peppercorns

Oil

Method

1. In a pressure cooker put all the vegetables, some amount of crushed ginger, green chilies, lamb meats' pieces, basil pesto, chicken stock, salt and black peppercorns.

2. Pressure cook the above mixture until the veggies and meat are tender.

3. In a wok fry leftover ginger, shallots and add some more green chilies to it. Add the cooked meat and veggies. Simmer for sometime.

4. Garnish the stew with black pepper powder and caramelized onions.
