My favorite breakfast on Sundays got to be pancakes (eaten in East India) and coconut chutney.

For Pancake you need:

2 cups white white lenils

1 cup uncooked rice

salt

Baking Soda

Oil

Method:

1.Soak both rice and lentils overnight. Grind them into a fine paste.

2.Add soda and salt and keep it aside for a night. On a pan take a spoonful of oil and spread it and then add a scoopful of batter and spread it like a pancake.

3. Then carefully flip it on he otherside, like ou turn an omelette.

Pancakes can be accompanied with yellow lentil dips or coconu chutney.
