Vegetarian Paella: A colorful, flavorsome culinary delight

If you are thinking of trying out the cuisine of Spain, then you ought to first try out the most celebrated rice dish that comes from the lands of this country. The paella is a rice dish that can be traced back to the Valencia region in the eastern part of Spain. Essential to this dish are ingredients such as rice, olive oil and saffron. In addition to these, scores of food constituents like chicken, fish, prawns, shellfish, squid, peas or peppers can be used to make paella a mouth-watering culinary affair.

Lets try out vegetarian paella at home by using the following simple recipe.

Ingredients:

Green peas - 1 1/2 cup

Onion (finely chopped) - 1 large

Tomatoes (diced) - 2 medium-sized

Garlic (finely chopped) - 4 large cloves

Carrots (cubed) - 1 cup

Bell Peppers (diced) - 1 large of each color (red, yellow, green and orange)

Vegetable Broth - 4 cups

Rice (any short-grain variety) - 2 cups

Olive oil - 4 tbsp

Paprika - 1 tsp

Saffron (crushed) - 1 tsp

Lemon wedges and chopped parsley for garnishing

Method:

1.) In a paella pan or any shallow pan heat the olive oil. Add the onion and garlic and fry till soft.

2.) Now add the saffron, paprika, rice and fry for 2-3 minutes.

3.) Add the remaining vegetables and saute for 5 minutes.

4.) Separately heat the vegetable broth till it is simmering hot. Now add it to the pan. Mix well.

5.) Cook on low to medium heat for 20 minutes until all water is absorbed and the rice turns tender.

6.) Garnish with lemon wedges and chopped parsley before serving.
