Yam in yogurt gravy

Yam and sweet potato most often share the same ingredients in the pot, but research reveals that yam has more sugar than sweet potato and that is how the former must be treated while cooking.

However the following recipe shares the cooking of yam in sauce normally concocted for cooking meats. The recipe is as follows:

Ingredients

Yam (cut into cubes)

Chopped Onion

Ginger-garlic paste

Chopped Tomatoes

Chopped coriander leaves

Turmeric Powder

Allspice Powder

Red Chilli Powder

Yogurt

Oil

Water

Salt

Method

1. Marinate yam with salt for an hour. After an hour deep-fry yam in oil.

2. In a separate pan heat oil and fry onions until brown, followed by the addition of ginger-garlic paste, turmeric powder, chili powder, tomatoes, salt and chopped coriander leaves.

3. Stir the paste and spices for 15 minutes or until the fat leaves the pan.

4. Add deep-fried yams, yogurt and allspice powder and stir for 5 minutes.

5. Add water to yams and simmer the gravy.

6. Serve with white rice.
