Can one get all the essential proteins and vitamins if one eats vegetarian dishes?

My sister lives in New York in a hostel and there they don’t get any non vegetarian meals to eat. I want to know can one get all the essential proteins and vitamins if she only eats vegetarian dishes. I don’t want her to miss the important nutrition which she should get in her age, so I am little worried for her. Can you tell me the name of some vegetables that have highest amount of protein and vitamins?
