Khichdi is an Indian dish which has rice and yellow moong dal in it. This dish is very ancient. Khichdi is very popular dish in India. Addition of vegetables is very common in this dish. It is cooked differently in different parts of India. Khichdi is cooked with prawns in Maharashtra. It can be cooked with nuts also. It is the food of poor as well as of rich also. It is a complete meal in itself. There is right amount of calories and fat in it. It can ve spicy or plain. There are many recipes to cook khichdi.
Take 1 cup basmati rice, 1 cup yellow moong dal, 4 cups of water, 1/2 spoon cumin seeds, 1 spoon oil, salt to taste.
Method:
Heat oil in a cooker. When oil gets hot add cumin seeds in the oil. Then put rice and moond dal in it. Add water and salt. Bring to boil. Low down the heat, cover the pot but not fully and cook until the rice gets prepared. Serve hot with yoghurt.
You can also add chiili, cloves, turmeric powder, bay leaves, peppercorns, cinnamon sticks, fenugreen, chopped onion and ginger. You can also add vegetables like cabbage, pumpkin, carrot, potato, cauliflower, green peas.
