Is it fine to use spring onion and potatoes for making a onion soup recipe for Sunday brunch?

I am all set to prepare cheese onion soup! However, I wanted to know from you guys if I could better try spring onions with potatoes for the soup. I am preparing it as a side dish for a main course meal on a Sunday brunch! My husband has invited his boss and wife for lunch, and since there is no other better option than a soup as both of them are quite health conscious, I have finally thought of preparing this recipe! Can somebody please help me with my query, and assist me with the right way of cooking the recipe with the changes of my liking?

Well, if you are using spring onions to make a soup , then it will become spring onion soup and not an onion soup. The flavor and texture between simple onions and spring onions varies to a large extent.Their similarity in their name and origin seems a misnomer when we compare their nature, flavor and variety.

One needs chopped three spring onions, 2 vegetable cubes, salt and pepper to taste, teo tablespoons of olive oil and three cups of water.

One needs to fry the spring onions in olive oil and add water to it. Once the water starts boiling, then one can add the vegetable cubes. After a few minutes, one can add salt and pepper to taste.

One can serve this soup with grilled potatoes topped with cheese to make it as an heavy appetizer.
