How do I make Gujarati recipes in the microwave correctly?


Will you please show me how can one make Gujarati(Indian) recipes in the microwave correctly? I have been trying the recipes from such a long time but have become totally frustrated due to the constant failures. Either they won't cook properly or won't taste properly or some other problem arises. I am so fed up of it now. Will you please help me? Will you please tell me how to make the Amiri Khaman in the microwave? Please put in the steps in a way that an amateur will also be able to follow.

I cannot tell from your question although what went wrong when you were cooking your Gujarati recipes but surely you can attempt this recipe. I am sending you Gujarati recipes which are not that hard to make. I am going to tell you Amiri Khaman which is a Microwave Recipe by Tarla Dalal.

The procedure is:

  1. Combine little besan, semolina, citric acid crystals, sugar, ginger green chilli paste, little salt and 1 cup of water in a bowl, mix it well to make the batter of pouring consistency.
  2. Just before serving, add some fruit salt and 2 tsp of water on it.
  3. When the bubbles form, mix it gently.
  4. Pour half of the batter in a greased 150 mm. 6 inch diameter which is microwave safe container and then microwave on a high flame for 2 minutes. Allow it to stand in a microwave for about 1 minute.
  5. Repeat it with the remaining batter to make one or more batch of dhoklas. Keep it aside to cool.
  6. Crumble that dhoklas lightly with the help of your fingers to get khaman.
  7. Add some green chillies, 2½ tbsp of oil, lemon juice and some sugar, mix it well and keep it aside.
  8. Put the remaining 2 tbsp of oil in a small microwave-safe bowl and microwave on high for 40 seconds.
  9. Add the mustard seeds and asafoetida and then microwave on high for 30 seconds.
  10. Put the tempering on the khaman and mix it well.
  11. Serve it immediately garnished with sev, coconut and coriander.
