Hey, my mouth gets salivated whenever I get hold of the scent of the sweet potato cake. My mother used to bake me a chocolate sweet potato cake, which I used to relish till the last bite. I would let you know the recipe of the same.
Ingredients-
Butter, softened-( 3/4 cup),
Eggs- (5),
Baking soda- (1/2 teaspoon),
White Sugar- (3 cups),
Baking powder- (1 teaspoon),
Baking Cocoa- (1 teaspoon),
Milk-( 1 cup),
Chopped pecans- (3 cups),
Ground cinnamon, nutmeg, all spice and cloves: - (1/2 teaspoon),
Confectioners’ sugar is optional,
All purpose flour-(3 cups)
Peeled Sweet potatoes, cooked, mashed and cooled- (3 medium),
Raisins- (1 cup),
Spice Islands pure vanilla extract- (1 teaspoon).
Method-
Preheat oven to 350 degrees, and then take in a large bowl. Add cream, butter and sugar and mix it well till the time the batter is light and fluffy. Add eggs, one at a time, and now beat them well after each addition and that too smoothly. Then combine the flour, cocoa, baking soda, baking powder and spices. Gradually add to creamed mixture, in an alternate manner some milk and mix it well. Now beat well after each addition. Beat in sweet potatoes and vanilla until it is blended properly. And stir in pecans and raisins, followed by transferring to a greased and floured 10-in. fluted tube pan. Now, bake in the already preheated oven( mentioned in the beginning of the method)for at least 75-85 minutes, or until a toothpick inserted in the center of the batter comes out clean. Let the sweet potato cake be cooled for 9-10 minutes before removing from the pan completely. And Dust with confectioners' sugar for garnishing . It is ready to be tucked away.
