Balsamic roast chicken recipe
Ingredients:
Chicken: approximately 4 pounds
Fresh/dried rosemary: 1 tsp
Garlic clove: 1 no.
Olive oil: 1 tbsp
Black pepper freshly ground: 1/8 tsp
Fresh rosemary: 8 sprigs
Brown sugar: ½ tsp
Preparation:
Firstly preheat the oven in 350 F. Clean the chicken both inside out with cold water. Then pat it dry with the help of paper towels. Take a small bowl and mince together garlic and rosemary. Loosen the skin of the chicken from the flesh; rub the flesh firstly with olive oil followed by the herb mixture. Then sprinkle it with black pepper. In the cavity of chicken, place 2 rosemary sprigs and truss the chicken. Next place the chicken in a roasting pan and then roast it for about 20-25 minutes/pound for approximately 1 hour 20 minutes. Cook the whole chicken in an internal temperature of about 180 F. Frequently baste with pan juices. Once the chicken turns brown and the juices run clear, immediately transfer the chicken in a serving platter. Take a small saucepan and mix together brown sugar and balsamic vinegar. Heat it until warmed but do not boil it. Then carve chicken and also remove the skin. Coat the pieces with vinegar mixture. Finally garnish the roast chicken with remaining rosemary sprigs.
