Here is the recipe for healthy tomato soup. I am sure if you prepare the soup according to the recipe given below, your daughter will surely like it.
Ingredients:
1/3 cup yellow moong dal i.e.split yellow gram
5 cups chopped tomatoes
1/2 cup finely chopped onions
1 tbsp cornflour
1/3 cup warm low fat milk, 1 tbsp butter
salt to taste and black pepper
Procedure:
Pressure cook the tomatoes and the moong dal with 3 to 4 cups of water till the dal is cooked. Then cool and blend in a liquidizer. Keep aside. Now melt the butter, add the onion, sauté for 3 to 4 minutes. Then add the pureed mixture. Mix the corn flour with a little water and pour into the soup and simmer for 2 minutes, stirring occasionally. Add sugar, milk, salt and pepper and bring to a boil. Then finally serve hot ,garnished with 1 tablespoon of the toasted whole wheat bread croutons.
