Insulin works to drive the sugar in your blood in to your cells to provide energy. The extra sugar gets stored in your muscle and liver. The basic logic that goes behind how carbs help in weight loss is that the insulin allows sugar to be used in energy while preventing fat breakdown in the body. Now, when you start taking low carb diet, it results in lower insulin level. And this causes the body to burn the stored fat to release energy.
