Indian Spices play really a very important role in Indian style of Cooking. Masala is the Hindi word for all the spice. When a combination of different spices, herbs and all other condiments are ground together, it is also called masala. More about the garam masala.
Water, vinegar, yogurt and other liquids are sometimes added to some ground spices. This wet mixture is called a wet masala and it is used as a marinader or sauteed in oil even before adding the main vegetable or meat so that its delicate flavors of the spices are very much released in the recipe.
Some tips for Storing Spices is Store these spices in a very cool, dark place. Humidity, light and heat will cause herbs and some spices to lose their flavor even more quickly. Although the most convenient place for the spice rack may be above the stove, which is moving the spices to a different location may keep them fresh for longer.
