Cheesy vegetable lasagna recipe
Ingredients:-
Lasagna noodles :-( 13), frozen chopped spinach :- (283 grams package),
Curd cottage cheese :- (226 grams container small), ricotta cheese: - (680 grams),
Shredded mozzarella cheese, divided :- (3 cups), pepper :- (1 teaspoon), salt to taste,
Parmesan cheese :- (3/2 cup), milk :- (3-1/2 cups), all purpose flour :- (1 cup),
Garlic, minced:- (4 cloves), zucchini , sliced :- (3 small),
green bell peppers, chopped:- (3),
Carrots, sliced :- (3), onion, chopped :- (2 large), fresh broccoli, chopped :- (3 heads),
Olive oil :- (3 tablespoons).
Method:-
Now preheat oven to 375 degrees F (190 degrees C). And grease a 9 x 13 inch casserole dish. And bring a large pot of lightly salted water to a boil. And add lasagna noodles and cook for at least 9 to 10 minutes or until al dent drain. And heat oil in a large cast iron skillet over medium heat. And when oil is hot add broccoli, carrots, onions, bell peppers, zucchini and garlic. And saute for at least 7-8 minutes and now set aside. Then place flour in a medium saucepan and gradually whisk in milk until well blended. And bring to a boil over medium heat. And cook 5-6 minutes, or until thick, and stirring constantly. And stir in 1 cup Parmesan cheese, salt and pepper; and now cook for 1-2 minute, stirring constantly. And remove from heat and stir in spinach. And reserve 1 cup spinach mixture. And in a small bowl combine cottage and ricotta cheeses; and stir well. And spread about 1cup of spinach mixture in the bottom of the prepared pan. And layer noodles, ricotta mixture, vegetables, spinach mixture and 2 cups mozzarella cheese, ending with noodles. And top with reserved spinach mixture, 1/2 cup mozzarella cheese and 1/2 cup Parmesan cheese. And now bake in preheated oven at least for 35 minutes, or until lightly browned on top. Cool for approximately 10-11 minutes before serving.and enjoy.
