What kind of cheese will be best for making stuffed mushroom recipe?

Hey, today I have decided to be very smart and make something healthy for the party that I am going to have with mushroom, lot of cheese and other herbs and spices. As I am using cheese for the stuffing I want to know which is the best and the high quality cheese with less calories to make my stuffed mushroom recipe healthy. Also tell me from where I can get the fresh basils for my recipe in New York. Which oil do you suggest me to use- olive oil or normal soya oil?

Generally people on diet try to skip cheese saying it is high on calories. But cheese also has lot of milk protein and the low fat varieties are really good for health. Some of the low fat varieties are usually aged cheese. Use sharp or extra sharp varieties of Parmesan, Gorgonzola, Cheddar and Asiago. Parmesan usually goes well with dishes like stuffed mushroom. Make sure the dish is seasoned otherwise it will not have enough flavor.

Many cheeses are naturally lower in fat than others. These include part-skim mozzarella, string cheeses, farmers cheese.Goat cheese is lower in fat than cow's milk cheese.

A number of common cheeses are widely available in reduced-fat form, including Cheddar, Monterey Jack, mozzarella, Brie, Swiss, Colby, Muenster.

Olive oil will be a better choice than soy oil. The flavor of olive oil goes well with ingredients like mushroom and cheese. Soy oil is better for oriental or Asian cooking.

For fresh basil you could try Fiesta or one of the Asian markets (Hong Kong market, Ranch market, etc). You can also get them as potted plant from nursery and have it in your garden if you use it regularly as it will be cheaper.
