What other options do I have for the sauerkraut recipe other than the pork loin sandwiches recipes ?

What other options do I have for the sauerkraut recipe other than the pork loin sandwiches recipes? I have made pork loin recipes sandwiches quite a few times by toasting the rye bread slices, then I spread one side of each of the slices with the dijon style mustard. I then arrange the bread slices on a baking sheet and using two forks I pull the meat apart into shreds and then go ahead and make the sandwiches. Can you suggest some other lovely variations of the sauerkraut recipe? Please mention the steps simply and systematically in a detailed manner.

Add pork cook 2 minutes on each side or until done. Remove pork from pan keep warm. Heat teaspoons oil in pan over medium high heat. Add teaspoon salt coleslaw and next 4 ingredients cook 2minutes stirring frequently. Remove from heat. Combine mayonnaise and mustard spread mixture evenly over cut sides of rolls. Divide coleslaw mixture pork and cucumber slices evenly among bottom halves of rolls. Cover with top halves of rolls. Thank you
