Pairing up modern australian cuisine with mojito is definitely a great idea. Chilli mojito will to a great extent add up to the taste of your cuisine. Chilli will add a touch of spice as compared to the traditional Cuban lime and mint flavors. It is very easy to prepare chilli mojito at home.
Preparation and cooking time: 10 minutes
Ingredients used:
1 tsp dried chilli flakes
3/4 cup white sugar
2 egg whites
16 fresh mint sprigs
2/3 cup lime cordial
2 limes, coarsely chopped
24 ice cubes
320ml white rum
Soda water, to serve
2 long fresh red chillies finely sliced (optional)
Method:
Finely crush sugar and chilli flakes with the help of mortar and pestle and transfer it to a plate.
Whisk eggs in the bowl until it becomes frothy. Dip the rim of serving glass into egg white and then into the chilli mixture so that it gets coated on the glass. Repeat the same process with the remaining serving glasses and set them aside until set.
Mint, cordial and lime should then be divided among the glasses. The end of rolling pin should be used to pound it until it is crushed properly. Divide the rum and ice cubes among glasses and top it with soda water. You can also add a slice of chilli to each glass if u wish to.
