How to prepare a classic chicken salad recipe?


I am planning to cook for my husband as he has recently been promoted in his job and we both are quite excited about this entire affair. I want to prepare something really special for him on this weekend, but I don't want a regular meal kind of thing. He loves chicken salad, and this is what I want to prepare now. Can anyone please provide me this classic chicken salad recipe to make our celebration special? Thanks.

Chicken is a favorite food for your dinner as it's not too heavy on your tummy. When it's dinner and you know your husband loves chicken salad then it's easier. When you are making salad white meat is preferred for visual effect. The chicken should match very well with the salad leaves. Your plate should look pleasing and wholesome.

Chicken Salad:

Serves 2:

  1. Fontina cheese- 8 thin strips (4+4)
  2. 1 head Frisee, (1/2 + 1/2)
  3. arugula -10 leaves (5+5)
  4. 6 red cherry tomatoes (3+3)
  5. Bacon strips- 8 strips (4+4)
  6. Roasted chicken cut in strips -3 ounce (11/2+11/2)
  7. Sun-dried tomatoes- 2tsps( 1-1)

Dressing:

  1. 1 tbs mayonnaise
  2. 2 tsp olive oil
  3. 2 tsp sun-dried tomatoes

Arranging your plate:

  1. Wash the leaves in cold water for a few minutes so you don't have to eat dirt.
  2. Allow the leaves to drain in a salad spinner or you may use a colander.
  3. Then you start layering one on top of the other until you get a nice plate.
  4. On top of the leaves you may layer chicken pieces and alternating chicken pieces you have to place bacon strips.
  5. Cut the tomatoes in halves or in quarters and scatter all around your plate.
  6. In the middle you may place a tsp each of sun-dried tomatoes.

Nice Dressing:

  1. Combine all the given ingredients in your blender and blend them together for 1 minute.
  2. You may see a few tiny sun-dried tomato pieces but that's good.
  3. Pour in a bowl or in your squeeze bottle and serve.
  4. Use the dressing as per your requirement.
