How to make quick and healthy breakfast?


I have recently joined as an senior executive at a corporate after a sabbatical leave. My 12 years old son goes to school, and I am always in a hurry to prepare something for breakfast, which could be healthy and nutritious for him. Therefore, I want some advice regarding a few quick and healthy foods for breakfast? My husband helps me in preparing breakfast, and due to this, he is often late for work. I would really appreciate you guys for an efficacious solution to my problem. Thanks.

Here are some healthy breakfast recipes, which I cook for my children and you can try them. The recipes like artichoke and ripe oil tuna salad, bbq chicken sandwich, chicken & fruit salad, crab salad stuffed pitas, egg salad, greek tofu salad, egg's sandwich, pizza roll up, tuscan style tuna salad are usually relished by children and they can be easily prepared for even their lunch. Here is a healthy breakfast recipe which you can prepare in quite less time for your family:
Twice baked potatoes: Potatoes are one of the foods loved by the kids and especially when stuffed with a filling lean ground beef, low-fat cream, broccoli florets and cheddar cheese. This is one recipe for a healthy and energetic dinner.

Ingredients: Potatoes, beef ground, chopped broccoli, salt, pepper, cheddar cheese and low-fat cream.

Instructions:

1.Microwave the potatoes until soft and keep aside. Brown the meat till 3 minutes, cook the broccoli for 5 minutes. Mix the broccoli and meat together. Now cut off the top, one-third of the cooked potatoes; reserve it. Scoop out the insides and place the potato shells in a small baking dish, make a mixture of Cheddar, sour cream, salt and pepper and the scooped out potato insides and mash nicely. Add the broccoli and meat.

2.Evenly fill in this mixture into the potato shells and top with the remaining cheese. Microwave on High for 2 -4 minutes or until the filling is hot and the cheese is melted.
