Tilapia Tacos with cucumber relish

Ingredients:

4-6 ounce tilapia fillets

1 tablespoon olive oil, plus more for the grill

6 radishes, sliced

2 tablespoons fresh lime juice

1 teaspoon ground coriander

Kosher salt and black pepper

1 cucumber, sliced and halved

Lime wedges for serving

8 corn tortillas, warmed

1/4 cup sour cream

1 cup fresh cilantro leaves

Process:

a. Take a pan and grill oil in it on a high temperature.

b. Season the tilapia fillets with ½ teaspoon salt, coriander and ¼ teaspoon pepper; grill it for 2-3 minutes per side, until cooked completely. Make small pieces of it.

c. In a separate medium bowl, toss the cucumber and radish with the oil, lime juice and salt and pepper (as per taste).

b. Rub ¼ teaspoon pepper and ½ teaspoon salt on tilapia. Coat the fish with flour, egg yolk and the panko.

c. Cook tilapia in oil for 3-4 minutes per side, keeping the heat at medium high.

Tilapia with caper parsley sauce

4-6 ounce tilapia fillets split lengthwise

1 1/2 pounds fingerling or new potatoes, halved

1 cup dry white wine

a. Season tilapia with ¼ black pepper and ½ teaspoon salt. Wrap each fillet of tilapia with 1 slice of prosciutto.

c. Meanwhile, heat the remaining oil in a pan over medium high heat, and add garlic, black pepper and salt. Cook for 10 minutes, tossing at regular intervals.

d. Heat 1½ tablespoons of the oil in a large skillet over medium high heat. Add the bell peppers, garlic, and ¼ teaspoon each salt and black pepper. Cook, tossing frequently, until tender, 8 to 10 minutes. Serve with tilapia.
