Here are some healthy eating ideas which I cook for my kids and you can also try them like artichoke and ripe oil tuna salad, bbq chicken sandwich,chicken & fruit salad, crab salad stuffed pitas, egg salad, greek tofusalad, egg's sandwich, pizza roll up, tuscan style tuna salad. Here are somehealthy recipes which your son would love to eat:
1. Baked Chicken Parcels
Your kids would surely love this crunchy and juicyrecipe and what more this is healthier and easier to digest too.
Ingredients
Chicken breasts, finely sliced potatoes and mushrooms, olive oil, pepper, limejuice, salt and pepper.
Instructions
Take each chicken breast clean and make slits on the top side. Place all theother ingredients in a large bowl and mix well. Cut four sheets of aluminumfoil to make four parcels. Place one chicken breast and a handful of additionalingredients on each sheet of aluminum foil. Close around edges to make a squareshaped parcel which is completely sealed. Now place these parcels on a baking trayand bake in a preheated oven at 375 F for around 20 minutes or until fullycooked. Serve this with greens.
2. Twice baked potatoes
Potatoes are one of the foods loved by the kids andespecially when stuffed with a filling lean ground beef, low-fat cream,broccoli florets and cheddar cheese. This is one recipe for a healthy andenergetic dinner.
Ingredients
potatoes, beef ground, chopped broccoli, salt, pepper, cheddarcheese and low-fat cream.
Instructions
Microwave the potatoes until soft and keep aside. Brown the meat till 3minutes, cook the broccoli for 5 minutes. Mix the broccoli and meat together.Now cut off the top, one-third of the cooked potatoes; reserve it. Scoop outthe insides and place the potato shells in a small baking dish, make a mixtureof Cheddar, sour cream, salt and pepper and the scooped out potato insides andmash nicely. Add the broccoli and meat.
Evenly fill in this mixture into the potato shells and top with the remainingcheese. Microwave on High for 2 -4 minutes or until the filling is hot and thecheese is melted.
