Which is the best roasted Indian recipe chicken for my grandparents?

My grandfather likes chicken a lot and as it is their wedding anniversary which is soon approaching, I want to cook him a healthy Indian chicken recipe which is roasted. As he has heart problem, I don’t want to cook anything which is made using too much oil. So it will be really great if you can tell me any roasted chicken Indian recipe which I can prepare myself for him. Also tell me what else should I serve with it – naan or rice? Which combination goes best with chicken?

    This is a great idea to cook the favorite dish to greet your grandparents on their wedding anniversary. Chicken is great to be served with either naan or rice. You need to make prior arrangements for one whole chicken which is 3.3 lbs in weight. To cook the marinade, you need about 2 tbsps fresh unsweetened yogurt, lemon juice, garlic paste, ginger paste, red chilli powder, turmeric powder, salt. To make the yummy filling, you need three tbsps vegetable or sunflower cooking oil, cumin seeds, onions chopped fine, garlic paste, ginger paste, coriander powder,cumin powder, ground meat and salt to taste.

    For the vegetables, you need tomatoes finely chopped, frozen peas, chopped potatoes, lemon juice, chopped fresh coriander leaves, vegetable cooking oil to drizzle on chicken while roasting.

    Preparation: Initially, wash the chicken properly, remove innards. When done, pat dry. Put all the ingredients for the marinade in a deep bowl and mix it well. Put the whole chicken into marinade and coat well with it. Cover the dish and keep aside for 2-3 hours in the refrigerator. While the chicken marinates, prepare the filling. Heat about 3 tbsps of cooking oil in a deep pan. Add to it cumin seeds and fry for 1 minute. Fry till turn a pale golden colour. Add, the ginger and garlic paste. Add minced meat and all the powdered spices. Continue to brown, stirring often to prevent burning. Then, add the tomatoes, peas and potatoes, and cook till the potatoes are soft. Turn fire off and add lime juice and chopped coriander leaves. Mix it well. Remove chicken from the refrigerator and fill the stomach cavity with the minced meat stuffing. Put in a baking dish and drizzle all over with cooking oil. Roast the chicken and serve.
