Can someone share simple chicken breast recipes that can be made in advance?


I love eating chicken and I want to know that what are some of the recipes of chicken breast which I can make in advance and then serve it later on? As the guests are coming in evening and I will not be having much time in evening to cook it, I want to cook it in morning and keep it for evening. So, which recipe of chicken breast do you think is best? Please provide me the recipe as I don’t want my guests to serve restaurant food?

3 Pounds of boneless chicken breast, half tablespoon salt, one tablespoon oregano, one fourth table spoon of ground pepper and one tablespoon olive oil.

Method:

The oven should be heated upto 450 degrees in advance. Next step should be to place the oven rack in the center of the oven. In a small dish, measure one tablespoon of olive oil and mix in it salt, ground pepper and dried oregano. You can use rosemary, thyme or sage as a substitute to oregano. In case you want to use all of them, make sure the combination results to one tablespoon strictly. The spices should be mixed properly and rubbed all over the chicken breast. Make sure that you rub the mixture on the top and bottom of the roast.

Many a times there are thin layers of fat on the side of the roast. Do not cut them off or trim them because it will help to keep the meat moist. Oil the roasting pan with little amount of olive oil. Put the roast in a rack in a roasting pan. While placing the roast in the pan, be sure that you put the fat aside on the top. A slow and patient cooking would give better results as the meat obtained will be soft and nice. Now you should be ready with an oven preheated to 450 degrees. Put the meat into the oven. This high temperature is suggested as it gives a tempting golden color to the roast. Put the timer in the oven for ten minutes. After ten minutes of cooking, reset the temperature of the oven to 250 degrees. Cook the chicken breast for 50 to 80 minutes. By this time the meat should register 150 degrees on the meat thermometer.

The next step in the preparation is to take out the roast from the oven and you can serve it later.
