Will you share some really easy to make vegetarian recipes for my granny?


I am dieting from last two weeks and it has already started showing results, all I am doing is avoid junk and oily food. My grandmother has come to stay with me and I intend to cook something really nice for her keeping my weight losing efforts in mind. She has recently turned into a vegetarian, what should I cook for dinner for both of us? I really don't know much about cooking, as I never cook, thereby, would really appreciate some easy and delicious veg food recipes to cook for my granny. A little help please.

Pasta Salad

Ingredients

  • Penne or Fusili - 3/4 cup (cooked al dente)
  • Cucumber - 1/2 cup (cut into strips)
  • Onion - 1/2 cup (cut into strips)
  • Carrot - 1/2 cup (cut into strips)
  • Lettuce - 1/2 cup (cut into strips)
  • Capsicum - 1/2 cup (cut into strips)
  • Low fat cottage cheese - 1/4 cup (cut into strips)
  • Pineapple - 1/4 cup (cut into strips)
  • Lettuce (iceberg) for serving
  • Thousand island salad dressing (low fat) - 1 tbs
  • Pepper
  • Salt

Cook the pasta al dente. In a big bowl mix all the vegetables and toss it with the thousand island salad dressing. Add salt and pepper. Serve on a bed of lettuce along with bread.

Note

If possible after cutting the vegetables and pineapple refrigerate for some time. It tastes better when served as a cold salad.

Healthy tomato soup

  • Tomato - 5 (big, ripe)
  • Onion - 1 ( medium, roughly chopped)
  • Carrot - 1 (small , roughly chopped)
  • Garlic - 2 cloves
  • Milk - 1/2 cup
  • Corn flour - 1 tbsp
  • Coriander - 1 tbsp finely chopped
  • Water
  • Pepper
  • Salt

Cook the vegetables in 1 cup water. Peel the tomatoes and puree all the vegetables. Strain it using the remaining water (used for boiling vegetables). Heat the puree in slow flame. Make a paste with corn flour and mix it with the puree. Season with salt and pepper. Garnish with coriander. Serve with some toast.
