An ideal food for any season, tomato soup not only complements well with starters such as cutlets and fries but also is a very healthy appetizer option. Tomato soup is a very simple recipe and can be easily prepared at home. It takes about 30 - 35 mins to prepare a simple homely tomato soup. You can make a pureed smooth or chunky soup based upon your taste preference. Ripe tomatoes are the best for preparing tomato soup as they give the accurate sweetness and acidic tinge to the soup.
Tomato soup requires some basic ingredients like.,
- 1 kg tomatoes
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 chopped onion
- 1 clove chopped garlic
- 1 chopped bell pepper
- 750 ml Water or vegetable/chicken stock
- 1 tsp black pepper powder
- 1/4 cup basil
Preparation:
- Take the red tomatoes and peel them completely. Remove the seeds and chop into equal fine pieces. Do not make large pieces to avoid inconsistency in soup.
- Heat the olive oil and add to it finely diced onion, garlic and bell pepper. Cook till they get soft and start changing color.
- Into the above mixture add chopped tomatoes and cook on medium flame for about 10 - 15 minutes.
- Now add the tomato paste , salt and pepper into it.
- At the end add water or vegetable/chicken stock as per your taste.
- Cook for another 15 - 20 minutes till you get the required consistency.
- Finally add fresh basil leaves and cook for another two minutes.
- The soup is now ready.
- You may use parley or coriander to garnish your soup.
