What are some spice mixtures that are used in North African cuisine? I am searching for the Morocco North African cuisine in particular. Iam familiar with some of the common spices used there, but can't seem to get my mixtures spicy enough (as in hot) and right to when I am trying to use then in the non veg recipe of mine. What would you like to suggest to me? Looking forward.

Ras El Hanout (Moroccan spice mixture), is a traditional spice mixture that is used in everyday Moroccan cooking. The ingredient are 1 tablespoon coriander seeds, ground1 tablespoon cumin1 tablespoon ginger, ground1 tablespoon pepper1/2 teaspoon mace1/2 teaspoon nutmeg1/2 teaspoon allspice1/2 teaspoon cardamom1/2 teaspoon turmeric1/2 teaspoon cinnamon1/4 teaspoon cloves, ground1/4 teaspoon cayenne.Combine all the ingredients and store in a tightly covered container. This makes about 1/3 cup spice mixture, or a little more than 5 servings of 1 tablespoon each.
