As you said that you want to know about some stuffed pepper recipe, so i have some Tricolor peppers stuffed with a wholesome filling, topped with cheese and baked recipe for you and easy to prepared:-
Cheese rice stuffed pepper recipe
Ingredient:-
1 medium: - Red capsicum, 1 medium: - yellow capsicum, 1 medium: - Green capsicum,
1/2 cup: - Rice, 1medium:- Onion, 2 cloves: - garlic, 1/2 cup: - corn nib lets,
1/2:- Leek inch stalk, 1:- Jalapeno, 1 tablespoon: - Olive oil, 1/3 cup: - tomato puree,
1/4 teaspoon: - Red chili powder, 2 cup: - Processed cheese, Salt: - to taste.
Method:-
Now wash all capsicums, and slice off thinly from the top and remove seeds to make it hollow. And don’t discard the tops. And then similarly slice off thinly from the bottom so that the capsicums stand steady when placed on the baking tray. And clean, wash and soak rice in 2 cups of water for 10 to 12minutes. Then drain and keep aside. And now Peel, wash and finely chop onion and garlic. Trim, and finely chop leek. Then wash and drain American corn nib lets. And Finely chop jalapeno peppers and then heat olive oil in a thick-bottomed vessel, and add onion and sauté on medium heat for 2 minutes and add garlic and leek and continue to sauté for a few minute.
Add tomato puree, chili powder and salt and cook on low heat for a few minute. Then add rice and 2 cups of water and cover and cook on low heat till almost done. And stir in corn nib lets and jalapeno peppers and cook further for 3 to 5 minutes or till the water is absorbed. Add 1/4 a cup of grated cheese and stir gently. Preheat oven to 160degree C. Fill each pepper with rice mixture and sprinkle each with a little of the remaining cheese. And replace tops, place peppers on a baking tray and bake for 15 minutes at 160 degree or till peppers have softened slightly.
And serve hot.
