As it is your first time, let us start with the basics. For any Thai curry or sauce, rice makes a great accompaniment and is one of the easiest things to prepare. Cooking rice is exactly like cooking pasta and practice makes one perfect. Buy some raw rice from the store and simple follow the instructions on the pack. If there are no instructions, take a measure of rice in a large pan, wash it a couple of times with water and add enough water to cover the rice. Cook it for 15-20 minutes on medium flame (with the lid on) and then carefully drain the water. You may add some flavors in the water, such as coconut or cinnamon to get flavored rice.
Next make a curry that goes with the rice. For a basic Thai curry, you need coconut milk (preferably fresh), some assorted vegetables, and seasoning. Heat a tablespoon of oil in a pan and sauté vegetables like broccoli, beans and carrots. Add a teaspoon of green chili paste, salt to taste, a dash of vinegar and some powdered cumin. Now add the coconut milk and let it simmer for a few minutes. Do not boil the curry after adding the coconut as it causes the milk to split and you’ll need to start over. Garnish with some chopped coriander and serve with rice.
